Sicilian Sunburst
Ingredients
- fresh pizza dough - available from bakeries and grocers
- 1 cup tomato sauce
- several sun dried tomatoes stored in oil, thinly sliced 'julienne'
style
- extra virgin green olive oil
- sliced pitted olives
- thin slices prosciutto, shredded
- 1 cup or less grated mozzarella cheese
Method
Allow pizza dough to sit in its plastic bag at room temperature
for a few hours. Pre heat oven to 400 degrees before rolling out
the dough on a floured work surface with a floured rolling pin to
desired thickness. Place rolled dough on a flat baking pan or pizza
pan and spread tomato sauce, top with attractively arranged toppings
in the quantities you enjoy and lightly sprinkle with a moderate
amount of cheese.
Bake for 10 - 15 minutes or until cheese bubbles and crust appears
slightly risen and golden.

- roasted red peppers
- rapini
- mozzarella cheese
- pitted, large, black Kalamata olives
- freshly grated Parmesan cheese
